The last couple of weeks have been as hectic as ever, but I’ve still managed to make time for some “me time” in between my studies. As someone who loves cooking and baking, my favourite thing to do when I have some time spare is making cookies! I’ve gone through at least thirty thousand different recipes before settling upon the perfect one, which goes as follows in case anyone’s interested (I can write out this recipe from memory now!):
- Add 150g softened butter, 80g light brown sugar and 80g caster sugar to a large bowl, and combine with an electric mixer until light and fluffy.
- Add 1 large egg and 1tsp vanilla extract and combine.
- Add 225g plain flour, 1/2tsp bicarbonate of soda and a pinch of salt, and mix with a wooden spoon.
- Add 100g chocolate chips (I like to use a mix of white, milk and dark chocolate chips if I can). At this point I find it easier to combine with my hands rather than a wooden spoon.
- When the mixture resembles a fairly stiff dough and all the flour is mixed in, form into balls and bake in the oven at fan 170C for about 10 minutes. I’m not very neat with my sizes, so usually this dough can make anywhere between 15 and 20 cookies.
In the past month, I’ve made about 12 batches of these cookies 😂 That approximates to about a batch every two or three days… Proof of their deliciousness.
This morning (it’s currently Saturday 23rd), I tried out a new drama club nearby. I was quite nervous about going but I’m really glad I did, because I had great fun. The other kids were all really welcoming and friendly, and the acting exercises we were doing were serious and challenging, not silly like I’ve found other drama clubs in the past.
In the afternoon, I did some very productive biology work and practised my instruments. I’ve been watching a lot of “Day in the Life” university student videos on YouTube which has kept me motivated to keep studying hard!
